- 1 small onion, chopped
- 1 clove garlic, minced

- 1/2 cup frozen corn
- 1/4 cup chopped cilantro
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 4 large flour tortillas
- Instructions
- Heat the olive oil in a large fry pan on medium heat. Put the onion inside and cook until it is softened for approximately 5 minutes.
- Put the garlic inside and again cook for an additional one minute.
- Stir in the black beans, diced tomatoes, corn, cilantro, chili powder, cumin, smoked paprika, salt and pepper.
