Brew a small amount of coffee (you’ll need about 1/4 cup) and let it cool.
1/4 cup Brewed coffee
In a bowl or mason jar, combine rolled oats, milk, Greek yogurt (if using), chia seeds, and pumpkin puree. Stir until evenly mixed.
1/2 cup Rolled oats, 1/2 cup Milk, 2 tbsp Greek yogurt, 1 tbsp Chia seeds, 1/4 cup Pumpkin puree
Add the cooled coffee, maple syrup, pumpkin pie spice, and vanilla extract. Stir again to combine.
1/4 cup Brewed coffee, 1-2 tsp Maple syrup, 1/2 tsp Pumpkin pie spice, 1/4 tsp Vanilla extract
Cover the container and refrigerate overnight.
In the morning, stir the oats. Add a little more milk if a thinner consistency is desired. Top with optional toppings and enjoy.
