Ingredients
  

  • 1/2 cup Rolled oats Old-fashioned oats work best
  • 1/4 cup Pumpkin puree Canned or homemade
  • 1/2 cup Milk Dairy or non-dairy options like almond or oat milk
  • 1/4 cup Brewed coffee Cooled
  • 2 tbsp Greek yogurt Optional
  • 1 tbsp Chia seeds
  • 1-2 tsp Maple syrup Adjust to taste
  • 1/2 tsp Pumpkin pie spice Or a blend of cinnamon, nutmeg, cloves, and ginger
  • 1/4 tsp Vanilla extract
  • Toppings Optional: whipped cream, extra cinnamon, nuts, or granola

Instructions
 

  • Brew a small amount of coffee (you’ll need about 1/4 cup) and let it cool.

  • In a bowl or mason jar, combine rolled oats, milk, Greek yogurt (if using), chia seeds, and pumpkin puree. Stir until evenly mixed.
    1/2 cup Rolled oats, 1/2 cup Milk, 2 tbsp Greek yogurt, 1 tbsp Chia seeds, 1/4 cup Pumpkin puree
  • Add the cooled coffee, maple syrup, pumpkin pie spice, and vanilla extract. Stir again to combine.
    1/4 cup Brewed coffee, 1-2 tsp Maple syrup, 1/2 tsp Pumpkin pie spice, 1/4 tsp Vanilla extract
  • Cover the container and refrigerate overnight.
  • In the morning, stir the oats. Add a little more milk if a thinner consistency is desired. Top with optional toppings and enjoy.

Notes

  1. Adjust the sweetness by varying the amount of maple syrup.
  2. For a vegan version, omit Greek yogurt or use a plant-based alternative.
